Apparently, one of my friends got very jealous of my hubby, since I write a lot about him. So, she messaged one day asking me to specifically mention her in my blog. She wanted me to write about something she suggested me to cook. Cute, isn't she? That day itself, she sent me a recipe of egg-less cake prepared without oven. So I decided to give it a try but since I didn't have proper setup for that specific recipe, I decided to try out microwave baked mug cake. Pretty much the same as long as I mention my friend as my inspiration (at least I hope so). So I got on with it.
I started off with a bowl and added in my dry ingredients: flour, baking powder, chocolate powder, sugar and salt and mixed them very well. I then added the wet ingredients: oil and milk. Once everything was mixed thoroughly I popped it in the microwave oven. It took about two and half minutes to cook the cake thoroughly. Now, when we tried it, I realized something was off just from the first bite. Though the texture of the cake was perfect, I happened to have put in too much salt. I accidentally used tbsp instead of tsp. Gosh! It was ghastly!! So I let it cool in the fridge for the night and started my research. Next day, I checked a few videos to come up with something and not throw the whole away. I did notice a number of people use messed up cakes as the crust for cheesecakes. But I wasn't quite sure if I should put too much effort in it as I didn't know if it would be edible. Instead I crumbled up the cake and added in a generous amount of sugar. I layered it at the bottom of a dish and placed a layer of some leftover ice cream over it. Idea was to balance the saltiness of the cake with the sweetness of the ice cream. After leaving it in the freezer for the night, we tried it the next day. I wouldn't say it was the best as per taste but it was edible enough! My hubby liked it so good enough.
Oops! I shouldn't have mentioned him in this blog. So because of my dear little friend, I tried out mug cake which did turn out to be a disaster but I managed to salvage it somehow. A huge thanks to her for this freaky experience and a virtual hug to her!
Ingredients: (for 2 servings)
Original recipe:
0.5 cup flour
4 tbsp chocolate powder
2 tsp baking powder
4 tbsp sugar
0.25 tsp salt
4 tbsp oil
4 tbsp milk
For salvation:
2 tbsp sugar
5 cups ice cream
