FRIED CHICKEN

I have tried making chicken fry several times using my mom's recipe but every time it didn't turn out the way I wanted it. The seasoning was perfect each time but the skin wasn't as crispy. So I started looking around and I mixed up a few styles coming up with my kinda fried chicken.

Here goes the recipe, I hope you like it.


First off, I marinated my chicken legs with all the seasoning in a mixing bowl. I let it rest for about an hour. While heating the oil, I mixed all-purpose flour with bread crumbs and cornmeal. I prepared my binding agent which was a mixture of egg and milk. I then coated the seasoned chicken with the binding agent followed by the flour mixture. To give it an extra crisp, I applied another coating of binding agent and the flour mixture. I deep-fried the chicken in heated oil till the chicken was thoroughly cooked.


Ingredients:

(For seasoning)

2 pcs            chicken legs with skin

1 tsp             salt

1/2 tsp          red chili powder

1/2 tsp          coriander powder

1/2 tsp          cumin powder

1/2 tsp          mixed spices

1/2 tsp          ginger paste

1 tsp             Greek yogurt

(For the coating)

1 pcs            egg

2 tbsp           milk

2 tbsp           Italian flavored bread crumb

2 tbsp           cornmeal

4 tbsp           all-purpose flour


Let the chicken legs rest for 10 minutes on a paper towel to soak up the excess oil and VOILA! crispy chicken legs ready to be served.
