MUGHLAI TORTILLAS?!

Staying at home usually magnifies the cravings for snacks, also nurtured by the numerous easy-to-make snack videos in YouTube. Mughlai paratha were one of those snacks, I suddenly started craving for. It is actually fried-stuffed bread which originated in Kolkata, India. Now when I started craving this, I was running low on flour, not enough to make a mughlai paratha. Somehow I don't like preparing in advance, I always end up cooking on a whim. It may sound quirky but I just can't help it. So while scanning my fridge for anything that I could use for making these, I noticed the piles of tortillas in the lower shelf of my fridge. That's when I came up with mughlai tortillas! Oh my goodness, that sounds hilarious. But it is pretty exciting to come up with cooking ideas on a whim and especially when it actually works.



Now most commonly, the mughlai parathas are stuffed with eggs in Bangladesh. So I took out two tortillas and beat up an egg with a pinch of salt in it. On a cutting board (you could use any other surface but I preferred a cutting board), I placed my first tortilla and poured half of my egg mixture on it. I spread the mixture out evenly, added some toppings of onion, red chili flakes and cilantro. The first time I tried it, I used cheese too but it's taste completely overpowered, so I avoided it since. I then placed the other tortilla on top and coated it with a layer of the left over egg mixture. I wanted to coat both the outer sides of the tortilla but I had a feeling the stuffing would spill if I turned it over for the other coat. So instead I flipped the whole thing and placed it on a pan smeared with oil. I then coated the other side, how cool am I? LOL! I am kidding. I then let both the sides get that gorgeous brown color at a medium heat. You don't want to cook the outside before the inside. Once done, you can serve it with a sauce or dip but I preferred having it on its own! It was so good and, most importantly, filling. I went on for another 3 hours before I started preparing dinner.


Ingredients: (for 2 servings)

2 pcs flour tortillas

1 pcs egg

0.25 tsp salt

1 tbsp chopped onions

0.5 tsp red chili flakes

1 pcs sliced cheese
