OMELETTE SOUFFLE

Over the years, I developed a terrible habit of skipping breakfasts, in turn my hubby often whips up his own breakfast and most of the time, it consists of either boiled eggs or omelette or fried eggs or any other kind of egg dish. You can tell how much he loves eggs. I wouldn't be surprised if he chose eggs over me someday. Inspired from the recent trend of dalgona coffee (which is basically whisking the coffee until it becomes fluffy and aerated), I decided to give omelette souffle a try. I don't know how whisked coffee led to whisked eggs but regular omelettes were getting pretty boring by now, so why not?



Now, it is a pretty straightforward recipe. First off, I had to separate the yolks from the egg whites. This can be terrifying but after practicing on a number of eggs (I won't tell how many), it got easier. After separating them, I beat up the egg yolks until they were smooth and silky in texture to which I added a pinch salt for seasoning. Next came the egg whites, I added a little sugar to it before whisking it. Using an electric whisk is advisable but if you want a good arm workout, you could use a whisk. In my case, I neither wanted an arm workout nor did I have an electric whisk, so you may think I did it with a whisk but nope! I handed it over to my hubby since he wanted an arm workout (maybe!). Once the egg white became fluffy and aerated, I added in the yolk mixture and folded everything. In a pan smeared with oil, I added the mixture and let it cook in low heat. After placing it on a serving plate, if you think the omelette hasn't cooked through, this small key note will help. "Pop it back in the pan and let it cook, do not put in the microwave oven to further cook it". It will lose all the air and ruin all your efforts of whisking. I did that and regretted it immediately, actually my hubby regretted it (the poor soul). But on my second trial, it turned out perfect with soft and spongy texture, absolutely delish!


Ingredients: (for 2 servings)

2 pcs eggs

0.5 tsp sugar

0.5 tsp salt
