SPINACH-SALMON BHAJI

Spinach has been my all time favorite since I moved to the US. One of the spinach dishes that I often make is shrimp-spinach curry-slash-bhaji. But you know how it is, it gets boring after a certain while. So in order to try something different, I took the inspiration from my hubby's granny. Though I didn't get to spend too much time with her during my stay in Bangladesh but I absolutely love her food. One of my fondest memories of her were visiting the village she lives in. We were in a time crunch and we somehow managed a few days to spend with her. Almost every other relatives living around her invited us for dinner or lunch, you know the "নতুন বউয়ের দাওয়াত". All I told her was I wanted to have her food and she boldly denied everyone else's invitation. Her enthusiasm and love touched me. There was this dish she made that intrigued me. Apparently, she was very conscious of children not having fish ( and hence she couldn't believe I loved fish). So to make sure her kids or grand kids had appropriate amount of fish, she would incorporate it in her food very meticulously. She barely left any chance to separate them. It really was fun seeing kids actually trying and failing (ignore my evil side!). Now while reminiscing all that, I tried to incorporate fish in my food too. You never know if I have to do that for my kids. Just kidding! (Haha that rhymes in a weird way)

First off, I got my ingredients set: spinach and canned salmon. Next in a pan smeared with oil, I added in some onions, dried chili and some panch phoron (a blend of five spices). As soon as the onions start to brown, I add the canned salmon followed by the seasonings: turmeric powder, red chili powder and salt. I then threw in the spinach and allowed it to cook for about 5-10 minutes. And there you go! salmon completely incorporated with spinach. I must say it wasn't exactly like hers, but it tasted so good and you really can't separate them. So my kid's definitely gotta be wary!
Ingredients:
1 pcs canned salmon
4 cups chopped spinach
0.5 cup onions
3-4 pcs dried red chili
0.5 tsp panch phoron
0.5 tsp turmeric powder
0.5 tsp red chili powder
0.5 tsp salt
