CARAMELIZED VEGGIES

Around the end of 2018, I moved to Japan alone for a job. During that time, I wasn't very regular or conscious about cooking. Consequently, I ended up cooking convenient food which mostly included fried vegetables. I often took out any vegetable present in my freezer and fried it up. When my hubby had it for the first time, he became a total fanatic. But since it largely affected my protein intake, I stopped making them too frequently. Yesterday, my hubby started craving my fried vegetables out of the blue. Since it has been a while I made them, so I decided to make it and covered up my protein intake with shrimps and lentil soup.



Currently my freezer is filled with frozen cauliflowers and squash. So, I took them out and placed them in boiling water. I strongly suggest to add the cauliflowers at least 5-10 minutes later. I made a mistake of putting them in together and taking them out together. My bad! The cauliflower got overcooked and so soft. Not that I mind but it was a little annoying to fry them later. My mom used to directly fry them but my sixth sense isn't as good and often ended up with under cooked vegetables. So I steam or boil them slightly beforehand. Next, it's very simple, add in a little salt and red chili powder for seasoning. Mix it well and shallow fry them on high heat to get that beautiful brown color on the outside. Once I was done with the vegetables, in the same pan (of course after you take out the vegetables) add in the shrimp with little salt, minced garlic and red chili powder. Let it cook for about 2 or 3 minutes. Shrimps don't take too long to cook and my hubby can't seem to eat overcooked shrimps.


I normally side the vegetables with steamed rice and lentil soup. But it can be eaten with your favorite dip as snacks. Next time, I will probably try putting them in the oven. I will definitely share my experience here!


Ingredients: (for 2 servings)

For vegetables:

2 cups cauliflower

2 cups squash

1 tsp salt

1 tsp red chili powder

For shrimps:

6 pcs shrimps

0.5 tsp salt

0.5 tsp red chili powder

0.5 tsp minced garlic
