Buying meat has become awfully difficult now, considering the current situation. Previously, we got meat from a halal food market in Albany. But considering the increase in the COVID-19 victims around the area of Albany, we preferred not visiting the halal market as much. That being so, most of our groceries are ordered from Walmart. And the proteins those are mainly available to us are eggs, shrimps and fish. I can't even remember the number of times we have had shrimps for our meal in the past few weeks. To the point that I ran out of all the different kinds of shrimp recipes I knew. It doesn't bother me in what form we are having shrimps, as long as I am having shrimps. It is by far my favorite protein and I can have it with almost anything. Name an ingredient and I can guarantee you, I can pair it with shrimps. Now it won't be fair if you come up with dessert ingredients. I remember my brother-in-law asking my mom about my favorite food and without even thinking, she endorsed shrimps. But recently what bothered me more was my hubby getting bored of shrimps. He never mentioned it to me but I could tell (call it mind reading!).
While looking for ideas, I stumbled upon "Garlic shrimp pasta". It seemed pretty easy and looked delicious, even to my hubby. So to start off, I boiled some water and added in the pasta with a pinch of salt. While the pasta was cooking, I added butter and olive oil in a pan followed by chopped onions, minced garlic and shrimps. I allowed it to cook for about 4-5 minutes and then added salt, red chili flakes and red chili powder for seasoning. Once the pasta were cooked, I added the pasta to my shrimps and stir fried it for another 2 minutes. Right before dinner, I started feeling guilty about not having any vegetables at all in this meal. So I took out a few asparagus and sauteed it with a little salt and red chili powder. Wasn't the best choice but my hubby seemed to have enjoyed it, which made me very happy! It took about about 15 minutes to prepare this including all my prep time and it turned out to be finger-licking good.
